Tips for Cooking and Storing Tofu ![]() When cooking with tofu, keep in mind that its water content differs occasionally. You may have to adjust the liquids in your recipes accordingly. Remember, it is always easier to add more liquids to a recipe than more dry ingredients. • To make a firmer or drier tofu, wrap it in cheesecloth or paper towels and place it on a drain board. Place a small dish on top of the tofu and a 1-pound (454 g) can on top of the dish to press the water out. Drain for at least 15 minutes. Parboiling the tofu (see below) will also create a drier product. • To create a crumbly, dry tofu good for stir-fries, wrap tofu in a clean towel and twist to wring the water out. • To use tofu as a thickener for sauces and gravies, make your sauce or gravy thinner than usual. Whip in the tofu using a wire whisk. The texture will not be smooth, but your sauce will be richer in protein. • Use fresh, sweet tofu in desserts, salads, and drinks. Use older, slightly bitter tofu for cooking. • Refrigerated tofu turns pink around the edges when about to go bad. Revitalize it by parboiling it, but use it soon. To parboil, place the tofu, whole or in slices, in a saucepan; cover with water and bring to a boil, then reduce the heat and simmer for about 3 minutes. Remove tofu with a slotted spoon. • Tofu that smells yeasty or sour should be discarded. |

A popular medieval contest required horsemen to ride around closely placed barriers while inserting lances through small metal rings—an activity that necessitated short gallops at full speed. Sixteenth-century English-speakers used the noun 「career」 (from Middle French carrière) to refer to such gallops and the verb 「career」 to mean 「to gallop for a short burst at full speed.」 By the mid-17th century, the verb had acquired its general 「go fast」 meaning. 「Careen」 shares this sense, but it can also mean 「to sway from side to side」 or 「to put (a boat) on a beach to work on the hull」; it traces to a Latin word for 「hull.」 |
